On Yu Leng's birthday..

Well, she should be studying or maybe still sleeping right now. Haha.. Sleepy head. Wanted so badly to call her, but aih... wished I were richer. Nevermind that. So this little girl's 21 huh? (I think she's gonna rip my head off when she sees this. Little!?) No, no.. sorry. I'll start over. So the tough girl's 21 huh? (Hope I get the right adjective this time) Chomp, chomp.. (Uh! Excuse me.. I'm chewing some apples for breakfast) Did the birthday card arrived on time? It better did or else.. Chomp.. chomp.. (still chewing..)

Since I can't afford to send you a cake in the land far far away, might as well make one - HERE! I won't take long. Just a FEW lines. Now, let's decide what cake. Hmmm... hmmm... hmmm.. Is tiramisu cake ok? Fine, you say? Then fine it is (loosely translated, Tira-mi-su simply means "pick-me-up").

The ingredients:
8 ounces cream cheese, room temperature
2 cups chilled whipping cream
2/3 cup powdered sugar
6 tablespoons amaretto (just what the heck is this?)
3 tablespoons unsweetened cocoa powder
1 tablespoon coffee powder
3 ounces bittersweet (not unsweetened) chocolate, coarsely grated
1 cup sliced almonds & some toasted Chocolate shavings

Hajimemasho!

Using electric mixer, I beat the cream cheese in large bowl until smooth (Yeah! Beat it, baby!). Added 1 cup whipping cream, 2/3 cup powdered sugar, 2 tablespoons amaretto, coffee powder. Beaten until fluffy and smooth. Oww.. my hand ached from holding the handle. Using same beaters, I beat the remaining 1 cup cream in medium bowl until firm peaks form. Then, folded whipped cream into cheese mixture for frosting.

Now cut the cake (oh i cut the cake before you did! Heh heh.. sorry Yu Leng!) horizontally into 3 equal layers. Must be equal eh? Just where did I put my ruler? Wait, just a sec.. I'll go get it now. Some 20 minutes later... Hmph! Now it's equal! Looked down at the half massacared cake.. Smirk! It's perfect!

Placed the bottom cake layer on platter. Sprinkled it with 4 teaspoons of amaretto. Spreaded with 1 cup of frosting. Sprinkled with half of grated chocolate. Put another layer of cake, then repeat amaretto, frosting and grated chocolate. Now onto the third cake layer. Sprinkled with 4 teaspoons amaretto. Spreaded remaining frosting over cake. Pressed almonds onto sides of cake. Topped with chocolate shavings.

IT"S DONE!

Eh, Yu Leng, if you are reading this.. make a wish. I made a cake right? No candles? Ok, ok.. I'll light them now. There you go. Eh? Still complaining? Now what? No birthday song? Ok ok.. I'll sing.. Music start.. On the count of three.. 1.. 2.. 3

They surprised me with Chocolate Tiramisu ice-cream cake for my birthday!!!
